My ownstyle Tajine
Time to preparation:
around 30 minutes.
Baking Time:
at least 1h (simmer).
Ingredients for 4 people​
Vegetables
- 4 zucchini
- 2 eggplant
- 6 carrots
- 1 white turnip
- 2 bunch of green beans
- 2 tomatoes
Meat
- 4 chicken leg (here)
But it could be lamb chop.
You can also add 4 merguez (spicy sausage) or "keftas" homemade beef balls.
Spices
- Ras-El-Hanout (it is a mix of several spices. You can make one with a mix of the following spices in powder: ground coriander + tumeric + black pepper + nutmeg + cinnamon
- Cumin
- Fresh Coriander
- Salt, pepper
- 1 teaspoon of cinnamon
Ustensils:
The must is a tajine dish as in the pic.
But before I had it, I used to cook in a wok or a large casserole.
We served it with some "Couscous"

Take off the chicken legs'skin and put them on the pan with some olive oil.
Sprinkle some cumin, salt and let them getting brown softly.
In the same time, wash and cuts the zucchini. The perfect size is to cut in 2 (or 3 if long) and then each part in 4 piecec in the long. Try to keep this size for the eggplants and carrots.
Turn your chicken and add the zucchini while you are cutting them.
Do the same with the carrots, the eggplants, the turnip and then the tomatoed (diced). Keep the green beans for the end.
Each time you add a new veggie, sprinkle generously some ras-el-hanout and/or cumin (I do 1 per time but a bit of both each time is the same). Mix softly to put the veggies from back to top.
When it start to be full of veggies, put the chicken along the side of the pan and left the veggies on the middle.
Pour some water until your veggies are half in it.
Add the green beans and the fresh chopped coriander (the leafs and also the stem wich is very tasty too!)
Sprinkle some cumin, ras-el-hanout, cinnamon, salt and pepper.
Cover and leave it simmer on a very low fire (if you have those thing to put your pan higher, use it!)
Check sometimes is the level of the water is still the same or add some.
Served it with some couscous and savourez!
